LUNCH SPECIALS.
Menu of lunch specials changes every week. During lunch, 2 or 3 course menu is offered, i.e. two starters and two main courses of the week. If 3-course lunch is ordered, a dessert is also served. 2-course meal with water and coffee/tea costs ER 20, meanwhile, 3-course meal with water and coffee/tea costs EUR 27.
DINNER.
Dinner menu in Telegrafas changes once a season, i.e. 4 times a year. When creating a dinner menu the kitchen of the restaurant tries to highlight the unique European culinary taste and to take a modern look at it.
When creating a season’s food card the head chef Javier Lopez stresses the importance of high quality products. “A product is the king, he says. The kitchen ensures that only the best products found on the market are used in the kitchen of Telegrafas.
Every dish on the menu has its own history because every ingredient is important. For instance, extremely rare class oysters are offered here, or meat of a 45-day milk-fed lamb.
According to Mr. Lopez, in summer menu, the aspiration is to emphasise the importance of local products, for this reason, when creating the menu chef chooses plenty of Lithuanian products – mushrooms, berries, seasonal vegetables, eggs, herbs, cheese from Dargužiai village. He values Lithuanian game, forest mushrooms and berries. According to him, these are products of royal quality.
EXCLUSIVE DISH.
As the chef of the restaurant appreciates the Lithuanian game most, it is no surprise that a dish of venison from Samogitian forests became an exclusive dish of the restaurant Telegrafas. To create this dish Mr. Javier invited local farmers from Joniškis to assist. They supply high-quality game. As the executive chef puts it, in creating a venison dish, the most important is to take into consideration which products go with venison best. These are products found in the same spaces where game is hunted. Deers eat grass, berries, mushrooms in a forest, therefore, a dish also contains forest bilberries, high class Lithuania boletus, and traditional Lithuanian švilpikai (made of potatoes).
WINE CARD.
Sommelier of the restaurant– Narimantas Miežys – was awarded the best Lithuanian sommelier for four years in a row. He is present at the restaurant at least 5 times a week and helps clients choose the best wine and food combinations.
Wine card of Telegrafas is dominated by wines from France, Italy and Spain. The range of wines is comprised of over 200 different types of wine, and more than 20 wines on draught. Wine prices range from EUR 25 to EUR 3,700 per bottle.
BREAKFAST.
Although Telegrafas is set up near Kempinski Hotel Cathedral Square, breakfast is served not only to the hotel guests but also to the city dwellers. They can find an abundant breakfast table here: home-made breakfast cereals, several types of fresh home-made bread, culinary dainties of local farmers.
Breakfast can be chosen from a special menu – organic eggs Benedict, eggs Florentino, royal eggs served with various ingredients. Also traditional Lithuanian breakfast can be ordered which can be supplemented with black perigord truffles, waffles, pancakes, cereals, porridges, yoghurts.
INTERIOR DESIGN.
Interior of the restaurant is dominated by stone, wood and metal. The restaurant is cosy because of wood floor, finish of the Venetian style, special lighting, fragments of historically important 16th century defensive wall were opened and the view to Vilnius cathedral.
INTERESTING.
From 1948, Kempinski Hotel Cathedral Square building had the central telegraph of Vilnius. After renovation, the restaurant of the hotel retained its bond with Vilnius city history – it had its historical name returned and remains of the 16th century defensive wall were opened up.
