DINNER.
The menu of Böff changes twice a year, however, it has dishes that never leave the menu – too many people return for particular dishes. Besides, as the owner and chef of the restaurant puts it, “a good steak is a good steak, you cannot change that”.
Brilliance of Böff steaks lies in simple things. It is well-matching quality ingredients, proper spices’ ratio, proper technique, and, certainly, mastership of the chef.
Apart from meat dishes, the restaurant always offers a wide range of seafood, fish, also desserts created by the chef as well as specialties of the week, however, meat dishes are, definitely, the strength of the location.
Interestingly, having ordered a steak, diners can choose the piece of meat for the steak themselves.
INGREDIENTS.
Most of ingredients come from the Netherlands and Germany. The latter supplies cooled (in no way frozen) seafood, and buys the highest quality meat from Mher in the Netherlands. It is purchased in tonnes because the chef also has to supply sufficient amount of meat to his butcher’s.
Besides, the man recently launched a bull farm in Lithuania with his business partner. The farm which is not far from Ignalina presently has 12 bulls which belong to the Armenian. Four of them are fed solely grains, four – only grass, and the last four – a mixture of grains and grass.
CHEF.
Owner of the restaurant – Mher Gevorkjan – is an Armenian born in Yerevan. His professional career to road is long and full of experiences. From 1999, Mher worked as a chef in cruise ships in the Carribean. Job interview for a position in cruise ships was organised on the 17th floor of hotel Lietuva, in Vilnius. He then met his future wife who was the reason to return to Vilnius after six years for a longer period of time.
Thus in 2005 Mher Gevorkjan married a Lithuanian and started working for the Lithuanian hotel Reval Hotel Lietuva as a chef. Having accumulated extensive experience, he decided to take on new challenges and after long wandering with this family around the world and work for high class restaurants, Mher Gevorkjan opened Böff in 2012 autumn. The restaurant is located next to the apartment complex of Kind Mindaugas situated near the Mindaugas bridge with a view to the Gediminas Castle.
For 18 months, Mher worked in his restaurants without any rest days from an early morning to the late evening – every steak would reach the tables of diners directly from the hands of the chef. Now he has a harmonious team and can finally afford some rest sometimes.
PRIVATE DINNER.
It is not an ordinary tasting dinner during which people can taste different “genres” of unordinary dishes. Böff organises exclusively meat tasting dinners on request. It is designed for meat lovers. During such dinner, meat prepared in different techniques is tried (tartars, grilled meat, meat roasted in the oven, in pan, etc.).
BUTHCER.
Recently, Mher launched one more project which is closely related to the restaurant Böff. It is the highest class butcher shop named Bučeris. You can find beef of the highest class, namely, Black Angus, which arrives from Creekstone farms. Their cattle are reared in animal friendly environment and are fed on the basis of grain following the 100 % vegetal diet. Also, in Bučeris, you can find meat from Mher cattle farm in Ignalina as well as dry aging beef.
